  3. 1/2 tsp hing
  4. 1/1 tsp turmeric powder
  5. 1 tsp red chilli powder
  6. 1 tsp cumin-coriander powder
  7. 1 tsp green chilies-ginger paste
  8. 1/2 Tbsp tamarind pulp
  9. 1/2 cup yogurt
  10. 1/2 Tbsp jaggery
  11. Pinch baking soda
  12. 1/2 tsp sesame seeds
  13. 1 tsp mustard seeds
  14. As per taste Salt
  15. As required Sesame Oil to fry

Instructions to make to make Patra

  1. Wash the leaves and remove the stem. Place the leaves on the kitchen top.
  2. In a bowl add Besan, yogurt, tamarind pulp, ginger-green chili paste, red chili powder, turmeric powder, cumin-coriander powder, baking soda. Mix well.
  3. Add water gradually to make a thick batter.
  4. Take a leaf and smear on the wrong side of the leaf with the batter. Place another leaf on it and smear the top, likewise continue with the rest of the leaves.
  5. Fold the sides and roll tight till the end.
  6. Put the rolls into steamer and steam for 25 mins. Set aside.
  7. In a wok heat sesame oil and add mustard seeds, when it splutters add the Rolls and fry gently on all sides until golden in color. Sprinkle sesame seeds and set them aside
  8. Plate and enjoy
